1 cup raw cashews
1/2 cup medjool dates
1/2 cup rolled oats
1/2 tsp pure vanilla extract
1/8 tsp sea salt
Handful dark chocolate chips
1. Soak nuts and dates in water for 4-6 hours [optional but recommended as it softens them to blend better.]
2. Drain water from nuts and dates. Remove pits from dates.
3. Combine ingredients in a food processor and pulse until a smooth paste is created. if too wet, add more dry ingredients. If too dry, add 1 tsp of liquid at a time until slightly sticky to roll into bite sized balls.
4. Roll into bite sized balls and start munching!
